Remarks:
Plymouth, Wisconsin marked its centennial celebration in 1977 by installing this sculpture which has become a local landmark. The sign in front of sculpture reads: 1877-1977 PLYMOUTH WISCONSIN/HOME OF/BORDEN CHEESE DIV./SARGENTO CHEESE CO./S & R CHEESE CORP./FARM BUREAU/PLYMOUTH CREAMERIES/PLYMOUTH has been the hub of Wisconsin's/dairy industry since the city was/founded. The premiere dairy cow, the Holstein,/represented here, was imported from Holland/in 1870. In 1882, the National Cheese Exchange/was established at Plymouth. The city was soon/known as the Cheese Capital of the World./Dr. Elmer Eldridge and Harmon Wheeler, both/perfected methods of processing cheese and/were residents of Plymouth. Today, several/cheese and dairy companies are flourishing/in Plymouth. IAS files contain an article from the Milwaukee Journal Sentinel, Sept. 10, 1995, pg. 3H.
